Essential Commercial Kitchen Equipment


When it comes to commercial kitchens, most people imagine it like James Bond’s car – fully-loaded with high tech gadgets and equipment. Have you ever imagined how useless some of that technology actually is and how they could have saved the millions they spent on those things? Well, Mr. Bond may not be on a budget but most of the restaurant owners are.
So, the very first thing you need to manage your restaurant budget is to make a proper, streamlined list in order to cut down all the unintentional and unnecessary expenses. What happens is that most of the restaurant owners are unable to resist the urge to buy every equipment/appliance they find in the store.  While most of this equipment may be like innovative gadgets that can reduce time and effort required for a job, they won’t be much helpful for smaller budgets.
So, before you end up helplessly spending all your money on things you don’t need, here is a streamlined list of necessary equipment to keep your temptations from straying in the store.

Cooking Range and Ovens

Commercial kitchen or domestic, you definitely need a cooking range. However, when shopping for an oven or cooking range, make sure you know the number of people you are likely to serve at a time. For most of the start-ups, a medium range stove or oven would be more than enough. For start-ups, it is best to stick to gas ranges as electric ovens can double your electricity expense and they also take a longer time to heat up.

Grills and Griddle

Most of the kitchens do require deep fryers and grills, more specific range such as Panini grill may not be necessary for everyone. You can choose a grill with a thinner sheet as it requires less heating time and energy. The thicker sheet grill, on the other hand, is more appropriate for larger kitchens as it can spread the heat more evenly over the large area.

Preparation Area

Preparation area is a must-have for all kinds and sizes of commercial kitchen. This is where the food is processed. To make things easier and faster, you must find a food processor with all the required features along with a proper mixer/blender and professional slicer. Moreover, this must be placed closer to storage shelves where most of the utensils are kept.

Cold Storage

Similarly, cold storage is also a necessary requirement for all kinds of commercial kitchens. Of course, the most heavy duty and high-tech refrigerator is not what every restaurant requires. Go for a medium range but top quality refrigerator which will be enough to meet your cold storage requirements. It is best to avoid spending on a walk-in freezer or refrigerator unless you need to store a lot.

Washing Station

A washing station may not sound like a necessity for the overly-frugal restaurant owners here. However, it is a onetime investment that can save the cost of hiring extra staff members for the job. Besides, depending on the area your kitchen is located in, the local laws might require you to have proper hand washing and dishwashing equipment.

Commercial Deep Fryer Cleaning Tips 
General cleaning and maintenance are the best way to assure years of trouble-free service from your commercial fryer. Reference your owner’s manual for more product-specific cleaning tips, but read on for a few general cleaning procedures that are synonymous across all brands.
  • Clean the element whenever the oil is filtered or changed. Any time the oil is drained or filtered from the vat, heating ribbons or elements that are submerged in the oil should be brushed clean in order to maintain proper heat transfer. Also, scrub food crumbs and particles off of the fry-pot walls.
  • Wipe down the exterior at the end of the day. At the end of the day, be sure to wipe off the exterior of the commercial deep fryer, especially around the rim of fry vat. This is mostly a cosmetic and worker safety consideration as the oil could drizzle to the floor and cause a slip-and-fall hazard.
  • Clean the fry baskets at the end of the day. Be sure to remove the fry baskets from the vats at the end of the day and run them through the dish machine. Wait until the baskets are dry before placing them back over the oil because water will cause the hot oil to splatter.

Commercial Ice Machines: Do’s and Don’ts

Ice machines are probably the most-abused equipment in a commercial kitchen. This is twice as true for hotels, night clubs, and restaurants with more than 50 seats. In most of these cases, the overworked machines are actually costing the business a lot more than they need to. Read on to find out how to save money with your ice machine:

Do: Adjust your Ice Production when needed
One of the easiest ways to save money and increase the life span of your ice machine is to monitor and adjust ice production. Different seasons need more ice production than others so keep a log of when you make changes. After a couple seasons patterns will develop and you will be able to accurately predict how much ice you need.
  • Quick Tip: Another easy way to reduce energy consumption of your ice machine is to have it produce ice only in the daytime when power is less expensive.
Don’t: Keep Your Ice where it’s Warm and Stuffy
Of course I mean your entire machine, not just the cubes themselves. The truth is that either way, whether the room is hot or cold, your ice machine (if working properly) will keep your ice cold for the duration. The question is how hard it will have to work to do it. The higher the room temperature the more energy your ice box will consume to keep your ice iced. This will cost you. Put your ice machine somewhere that has good air movement and doesn’t heat up over 90 degrees.

Do: Regular Maintenance
In order to keep your ice machine safe and reliable you’ve got to give you machine a check up every few months. This means sanitizing the box, d- liming the water hose, and adding antimicrobial products. Keep up with these regular needs of your machine and you will find that it last its full lifetime or longer.

Don’t: Forget to Change the Filter
The last thing you need to check up on (and many owners don’t) is the water filter. Have you noticed that ice always looks pretty clean? Unfortunately looks can be deceiving. The filter on your ice maker should be changed every 6 months.

Do: Go Air Cooled
All ice makers are cooled by either air or water. Air cooled machines use much less energy. The best part is that there is little to no price difference between air and water cooled ice machines.
  • Quick Tip: When purchasing a new ice machine, look for the Energy Star logo if you want to ensure that your machine is the most energy efficient. A machine that is 10-15% more efficient in water and energy use can save you a lot of money over an average life of 8 years.
